All day on the 29th I wrote letters in my head to my daughter. All day. I walked around with a deep joy and a gripping unshakable sadness that culminated at the gym. There I was pink sneakers, ear phones, the intent to run to nowhere for 30 minutes, and my mind still firmly fixed on my daughter…
6 years together…I have been your mamma for 6 years!?!
Dear Coco, I am now that crazy woman at the gym who is running, crying, laughing a little and talking to you in my head…
Her birthday was also the first day of school, but the thing she wanted most was to get dressed up
and go to her favorite restaurant in Manly, “Yok Thai”.
And so we put dresses on, we took the bus which she loves, we walked around, ordered all her favorites,
and finally (according to her plan) headed back home to open gifts
and have dessert.
She was exhausted by the end of it, but going out on a school night, saving opening her gifts till the last moment, and having us follow her plan made her day.

Coco and i made the cup cakes together so she could bring them to school the morning of her birthday. Its an easy recipe and she had fun with it. YES it takes so much longer when i let them in the kitchen but they love it and its worth it!
for one batch:
175 g.unsalted butter,
175g. golden caster sugar
175g self raising flour
2 tbl. of milk
(Double the recipe if, like me, you have to make enough for a whole school class of kids!)
Put the butter, vanilla extract and sugar in a bowl and mix with an electric mixer until pale and creamy. Break the eggs into the mixture a little at a time and keep mixing. Then fold the sifted flour into the bowl until just combined. Add a bit of milk so you can drop the mixture into cup cake holders. If not poor the whole thing into a round baking tin and just make one big cupcake!
use Powdered sugar if not Coco likes a cream cheese icing:
125g unsalted butter, softened
250g cream cheese, softened
1 tsp vanilla extract
4 cups (640g) icing sugar, sifted and a dribble of milk.
(double the recipe if you have more cup cakes)
Mix the butter and cream cheese with a whisk, add the sugar and if it looks like its getting too gluggy add a very little bit of milk.
then ice, decorate and Buon compleanno!
